La personnalit\u00e9 de cette localit\u00e9 est marqu\u00e9e, en partie, par son potager, et cela se traduit \u00e9galement dans sa gastronomie avec des propositions comme le <b>chirigol<\/b> ou les <b>tortas de pimiento<\/b> nuanc\u00e9es avec du thon ou du jambon. Parmi les propositions les plus remarquables du recueil de recettes d&rsquo;Alca\u00f1iz, nous trouvons <b>des plats en sauce id\u00e9aux pour combattre les basses temp\u00e9ratures<\/b> de la p\u00e9riode hivernale comme l&rsquo;agneau \u00e0 la pastora, les haricots blancs \u00e0 la perdrix, le riz \u00e0 la morue avec des pommes de terre ou l&rsquo;olleta. Et pour finir&nbsp;? Eh bien, une bonne douceur, fr\u00e9quemment, pour f\u00eater une date marqu\u00e9e dans le calendrier. En ce sens, <b>elle trouve dans la viande son plus grand repr\u00e9sentant, offrant une mati\u00e8re premi\u00e8re de grande qualit\u00e9<\/b>. Le veau, l&rsquo;agneau, le porc, le sanglier, les cailles ou la perdrix sont l&rsquo;ingr\u00e9dient principal d&rsquo;une infinit\u00e9 de recettes qui proposent de les d\u00e9guster grill\u00e9s, cuits au four ou mijot\u00e9s avec des l\u00e9gumes secs, des l\u00e9gumes, des champignons et des herbes aromatiques. L&rsquo;\u00e9laboration de charcuteries est \u00e9galement une ancienne tradition ici, avec la <b>cecina<\/b> comme principal repr\u00e9sentant et avec le <b>Bollo de Morella<\/b> comme la proposition la plus singuli\u00e8re. D&rsquo;autres recettes autochtones sont celles des croquettes morellanes, de la soupe morellane, des ollas masoveras ou du frito. Bien que, sans aucun doute, l&rsquo;ingr\u00e9dient qui d\u00e9finit la proposition gastronomique de la localit\u00e9 soit la <b>truffe noire<\/b>, protagoniste de nombreux plats de son offre de restauration et de journ\u00e9es gastronomiques qui se c\u00e9l\u00e8brent annuellement pendant les mois d&rsquo;hiver. Le <b>miel<\/b> et les <b>fromages<\/b> compl\u00e8tent une proposition qui trouve dans <b>le fla\u00f3 son dessert le plus traditionnel<\/b>. trouve \u00e0 un point strat\u00e9gique entre la mer et la montagne, et sa gastronomie en est un bon exemple. <b>Son caract\u00e8re m\u00e9diterran\u00e9en<\/b> et proche de la c\u00f4te, \u00e0 laquelle elle est unie par le fleuve \u00c8bre, <b>se refl\u00e8te dans un recueil de recettes marqu\u00e9 par les poissons et les fruits de mer, parmi lesquels se distinguent l&rsquo;abadejo (comme ils appellent la morue \u00e0 Tortosa)<\/b>, les hu\u00eetres, les moules, les langoustines et le thon rouge. En revanche, <b>le caract\u00e8re de montagne se laisse voir avec d&rsquo;autres propositions aussi traditionnelles que celles des baldanas<\/b>, des saucisses \u00e9labor\u00e9es avec du riz, le go\u00fbt pour les artichauts et l&rsquo;importance des agrumes, cl\u00e9mentines et p\u00eaches. Et comme il ne pourrait en \u00eatre autrement, <b>sa proximit\u00e9 avec le delta de l&rsquo;\u00c8bre fait des plats de riz un incontournable<\/b>. D&rsquo;autre part, il convient de souligner que Tortosa fait partie de deux appellations d&rsquo;origine&nbsp;: la <b>DOP d&rsquo;huile Bajo Ebro \u2013 Montsi\u00e0<\/b> et la <b>DO vinicole Terra Alta<\/b>.
